At Kebabjoy, we made a conscious decision not to simply copy standard street food recipes. Through long and continuous culinary research, we set out to create a taste profile that is completely unique in the Malaysian market.

Four-Country Culinary Research

Our kitchen team studied and analyzed the best F&B concepts across four culinary capitals of the Middle East: Egypt, Turkey, Syria, and Lebanon. We looked at how each country handles meat cuts, spice blends, fat ratios, and cooking times. We wanted to take the best element of each:

  • The rich spices of Egyptian street food.
  • The clean grilling techniques of Turkish kitchens.
  • The fresh, balancing sauces of Levantine cooking.

By merging these influences, we developed our signature marinades, custom-made sauces, and custom selections of meats and healthy fats. Most shawarma spots in Malaysia offer repetitive flavors inspired solely by Syrian street food.
